GREEK ROAST POTATOES

Peel baking potatoes and cut them lengthwise into quarters. Rub with a little olive oil, sprinkle with salt, and roast in a shallow baking pan for 45 minutes, turning occasionally. If you're roasting a lamb or chicken in the same oven, you can drop the potatoes into the liquid surrounding the roast for the last 15 minutes of cooking.
